Ginger Lime Dressing

The bright and zesty flavors of this dressing strike a perfect balance of sweet, tangy, and savory, hitting your taste buds in a great way. This recipe makes a light, flavorful dressing that works well on salads served with Vietnamese caramelized salmon or chicken satay. I usually use this dressing when making spicy steak salad. 

I served the spicy steak salad with the ginger lime dressing to the Indivisible Riverside Board members. A group of progressive-thinking women who work to organize protests, light brigades, and marches.  An unlikely cast of characters that includes artists, school teachers, a law enforcement officer, a physicist, a biologist, a graphic designer, and a professional parks employee. The conversations around the dinner table focus on the current political climate and activism. While they bring diverse backgrounds to the table, their common interests bring them together, and a meal helps to create an atmosphere where it is safe to express their opinions. On a hot summer night, a light, refreshing salad is perfect.  

Ingredients

  • ¼ C Lime juice
  • 1 T Soy sauce
  • 1 T Rice vinegar
  • 1 T Finely diced shallot
  • 1 T Fresh ginger (Grated)
  • 2 t Sugar
  • 2 T Peanut Oil
  • Salt, and freshly ground pepper

Directions

  • Combine ingredients in a small bowl. Season with salt and pepper, to taste. Let it sit for 10 minutes before using.
