Watermelon Fries & Coconut Lime Dip

Riversiders try to avoid the dog days of summer. For years, my family escaped the summer heat with trips to the beach, mountains, and any location that promised a reprieve. When we were unable to escape, we would perform a well-timed dance of opening the house before sunrise, followed by closing windows and drawing curtains before the temperature climbed. Using the oven was strictly prohibited; a practice I still preach to anyone who will listen. Family dinners were BBQ and salads and eaten at a long picnic table dressed in a swim suit and towel. 

For obvious reasons, I have been thinking about summer salads/desserts that go beyond iceberg lettuce and cake.  So if you are holding down the fort, and looking for a recipe that is cool, healthy, and delicious how about this Watermelon with Coconut Lime Dip? It is a party in your mouth and easy peasy to make.

Ingredients

1      Watermelon

1 C   Greek yogurt

2 T   Coconut milk

1 t    Lime zest

1 T   Honey

Directions:

Slice the watermelon into fry-like shapes.

In a small bowl, mix Greek yogurt, coconut milk, lime zest, and honey.

Serve the watermelon fries with the coconut lime dip.

Tips:

Chill the watermelon fries before serving for an extra refreshing snack.

Add a sprinkle of tajin powder (fruit chili powder)  onto the watermelon for a spicy kick.
